Halestorm's Rock Star Recipes: Holiday Edition 2009

Just when you thought we were only going to talk about Holiday sales...BAM...

Recipe: Halestorm Groupie Fish Tacos.

Serves: 9+. It's always a party when a rock band does the cooking:)

What ya need:

For the Fish:
About 4 Pounds of Tilapia. We get Tilapia because it's usually the cheapest:)
Olive Oil
3 tablespoons Hot Chili Powder
3-4 Cloves Garlic
1 Lime

Sauteed Veggies:
Olive Oil
1 - Sweet Onion
6 - Cloves Garlic (Storm Credo: You can NEVER have too much garlic!!)
6 - Bell Peppers
2 - Jalapenos
half of a large bag of baby spinach

Taco Condiments:
Diced Tomatoes
Shredded Cheese
Guacamole
Salsa

Preparation:

The best things on the road are quick and easy. No reason to complicate!
Prep your grill. We use charcoal, so it takes a little bit longer.
Place fish in a bowl. We need two bowls for the amount of fish we use. It just makes it easier to handle. Pour olive oil over the tilapia. Just enough to cover. Add diced garlic, and chili powder. Cover the fish and get started on the veggies!

Preheat one large saucepan. Add olive oil, and throw in the diced sweet onion. Follow it up with diced garlic. After the garlic, we add the jalapeno peppers, with the bell peppers shortly after. Keep the heat low to medium, stirring occasionally. Don’t add the baby spinach until the end. It cooks in quickly.

Tilapia is a super flaky, delicate fish. We place a griddle on top of the grill, so the fish doesn’t fall through the cracks:) As with a lot of fish, this sucker cooks fast! 2 minutes on each side and they’re ready.

Throw it all into the biggest tortilla you can get your hands on. LLLLLLLLLeggggggennnnnDARY!!!!

    Apple Pie Punch

    Ingredients:
    2 cups apple cider
    4 ounces spiced rum
    2 ounces cinnamon Schnapps
    1 red apple, sliced

    Directions
    Combine apple cider, rum, and Schnapps in a pitcher. Serve over ice, garnish with red apple slices and toast to "long live rock&roll!"
